The flavors will transport you to the coast of any Spanish-speaking tropical destination of your dreams, which is perfect because you won’t physically be going anywhere for a long time due to quarantine. So take your taste buds on vacation!
1/3 Cup Coffee Liqueur, like Kahula
1/4 Cup Canned Coconut Milk
1 Ripe Banana, mashed
1/2 Banana, sliced, for garnish
1 Teaspoon Vanilla Extract
4 Slices Vegan Brioche Bread, cut diagonally
3 Tablespoons Butter
Confectioner’s Sugar, for garnish
1. Arrange bread slices in shallow baking dish.
2. In a medium bowl, whisk banana, coconut milk, coffee liqueur and vanilla extract until smooth. Pour over the slices, and let soak for ~1 minute.
3. Melt the butter in a large frying pan over medium heat. Fry bread slices for ~2 minutes, or until toast is golden brown on each side.
4. Arrange French toast on plates. Top with sliced banana and dust with confectioner’s sugar. Serve with syrup on the side.
